Now that I'm back at work (walking the thin line between full- and part-time), I'm finding it so much more difficult to really put out a good meal. On the weekends, I want to do as my Mum so wisely does, and "cook for the week"... but for some reason, I just find it impossible! I don't know why its so difficult for me to plan ahead, especially because I'm so great at planning everything else in my life WAY ahead of time! I try to think of casseroles, foods that will freeze well, foods that will easily break into smaller portions for my lunches... and I come up with nothing. So does anyone out there have any good ideas? Because the Cubs are coming home, and its about the get CR-RA-AZY around here!
My ideas so far:
Roast chicken on Sunday -- leftovers for chicken salad, chicken breast sandwiches, chicken enchiladas, chicken soup. (I just need to make a bigger chicken, because my 'fella almost always cleans that thing down to the skeleton the first night.)
Quiche -- freezes or refrigerates easily, easy to reheat for lunch/dinner the next day.
Umm... that's all I've got so far. And I really need more variety in my life than chicken and quiche.

Chili is another item which is good to make in huge batches, then freeze and re-heat.

ReplyDeleteI've never made polenta... do you have recipes or suggestions? Oh, I really want you to make broccoli spaghetti for us when you visit, no one can make it like you do!! My problem with soups is that I almost always tire of them after the first few bowls, so it sits there in the fridge forever...
