
So, it's kind of a pancake... but it's really so, SO much more than that. Seriously, this is probably the best breakfast I've ever made. We had bacon on the side, because I really love that crazy sweet-savory combination with breakfast. It is just amazing, and it's quite easy -- win/win.
Ingredients & supplies:2-3 plums, sliced into wedges
1 stick butter (
not margarine -- it would be an injustice!!)
3 eggs
1/2 cup milk
1/2 cup all-purpose flour
1 tsp. vanilla extract
1/2 tsp. salt
1/2 cup packed brown sugar
2 tsp. cinnamon
3 tbsp. lemon juice
Lemon curd, mascarpone cheese, or crème fraîche (optional)
Cast iron skillet (or oven-proof skillet)

Turn the oven to 450-degrees. Melt 1/2 of the butter in the cast iron skillet (I call them "skittles", but that sounds a bit uncouth doesn't it?). If you haven't already, slice your plums, and then add them to the skillet to cook for about 5-7 minutes.

In a bowl, whisk the eggs and milk together, then add the flour, vanilla, and salt. Whisk together well, so its not too lumpy. Pour this mixture directly over the plum & butter mixture in the skillet, and place the whole skillet in the oven to bake for about ten minutes, until its puffed up and brown.

While this is baking, mix together the brown sugar and cinnamon. Melt the remaining 1/2 of butter.
Once it has baked for at least ten minutes and has puffed up, remove from the oven and pour the melted butter over it.

Sprinkle the brown sugar & cinnamon combination over this, and bake for another five minutes, maybe a little longer -- you want the sugar to caramelize.
Remove from the oven and pour lemon juice over the top. Serve HOT, immediately, and top with lemon curd, mascarpone cheese, or crème fraîche if you choose.

I had none of these things, and ate it just the way it was -- so yummy!! Its really sweet, and that's why I think a savory side of bacon is great. I think this could also be really delicious with peaches, so maybe I'll try that next weekend?
