This is my favorite when topped with poached eggs, hollandaise sauce, and a shrimp skewer (thank you, Mill Street Grill!). I was too lazy to go that far tonight, so I just ate them plain. Still yummy!
Ingredients:
2 green tomatoes
1 egg
1/4 cup milk
Flour
Corn meal
Salt & pepper
Oil for frying (I used olive oil, vegetable oil works well also)
Beat together the egg and the milk. Set aside.
Put some flour in a bowl or on a plate.
Combine the corn meal, salt, and pepper.
Slice the tomatoes about 1/4-inch thick. First, dip in the flour and completely cover. Second, dip in the milk. Third, dip in the corn meal mixture, coat completely. Fry the tomato slices on each side, until slightly browned. Eat them warm!
