Mango Guacamole!

Okay, I was going to try to pass this off as my own recipe, but it doesn't seem right, when I owe it to the fabulous Martha Stewart. Thanks to my newly discovered Martha Everyday Food iPhone app, I found this -- Mango Guacamole.

I had two mangoes and two avocados going quickly from good to bad, sitting on my dining table, just begging to be made into... something! So, here it is (and its as fabulous as it sounds):

INGREDIENTS:

1 mango
2 avocados
2-3 garlic cloves, minced
2 serrano peppers, sliced (seeds removed if you want less heat)
Juice of two limes or lemons (I used lemon juice, but I imagine lime would be even tastier)
Chopped cilantro
Sea salt

Peel the mango with a vegetable peeler, carefully! It can get very slippery. Slice the mango vertically, and then slice again vertically, you want rather small cubes. Do the same with the avocado, and combine in a bowl with the mango. You want it to remain as chunky as possible, so always mix gently. Add the lemon or lime juice, chopped cilantro, minced garlic, peppers, and a sprinkle of the coarse sea salt. You can eat it right away, or store in a sealed container in the fridge.

Yum! I could have eaten it all off the spoon, but I'm going to try to save it long enough to bring it with lunch tomorrow. (It's unfortunate that the picture makes it look awfully... well, green and mushy?)
