Well... the picnic didn't exactly go as planned... As soon as we arrived at the beach/park, the clouds set in overhead, making it a little chilly for my taste. Then the rain... the downpour that sent us running for cover under a tree, my 'fella with the picnic basket haphazardly folded together, and myself wrapped in the sheet we were using as our picnic blanket, and a bottle of rosé. Thankfully, the rain only lasted a few minutes, and then the sun came out again. For a little while, anyway. It wasn't the best or most relaxing picnic I've ever had, but it was certainly memorable.
Picnic:
Red Bicyclette rosé
From the Green City Market: wasabi goat cheese, spread on sliced strawberries
Cucumber sandwiches (recipe below)
Garlic Havarti cheese and Genoa salami w/ crackers
The wasabi goat cheese on strawberries is absolutely divine! As recommended by the lady selling the cheese at the Green City Market.
Cucumber sandwiches
Slices of rye bread, crusts removed
Cream cheese
Mayonnaise
Ranch dressing
Cucumber, sliced very thin
I don't use exact measurements for the cream cheese spread...
Large amount of cream cheese
Medium amount of ranch dressing
Small amount of mayonnaise
It all depends on how many sandwiches you want to make. Combine these ingredients, and spread on both slices of the sandwich bread. Layer thin slices of cucumber. Keep them cool and fresh (don't let the bread become stale). Yum, delicate and refreshing, its a perfect picnic sandwich!
Always feel free to change the ingredients around, too! I never used to add mayonnaise before, and I'm sure you could substitute plain yogurt in there somewhere, with whatever spices you prefer. I like a little dill sprinkled on the spread, as well!
