Tomato sandwich

Unfortunately, I don't have a picture of this... I made it at work, and ate it too quickly to even think about taking a picture.

This tastes the best when you have just picked the tomato from the vine in your backyard garden... but I live in Chicago, no yard (curses!), and just had to make-do with for a tomato from the Green City Market. Lucky me, these tomatoes were gorgeous!!

Pretty simple stuff...

Ingredients:

Red tomato, warm (not from the fridge!)
Slices of bread, toasted
Mayonnaise
Lemon rind and lemon juice
Salt & pepper

Combine mayo with a tbsp. or so of lemon juice, and some lemon rind (I use a cheese grater and just scrape it right off), and the salt and pepper. Spread thickly on toasted bread. Add two slices of warm tomato. Aaah, enjoy... this is one of my favorite Summer sandwiches.

I'll make it again some time, and add a picture when I do. :)
